Chocolate Chip Cookies

Amount Ingredient
230g Cake Flour
275g All Purpose Flour
5g Kosher Salt
8g Corn Starch
6g Baking Soda
2.5 sticks / 283g Unsalted Butter
285g Brown Sugar
115g White Sugar
2 Eggs
3 Egg Yolks
100g Chopped Walnuts
450g Chocolate
  1. Brown butter
  2. Chop bars of chocolate
  3. Mix Wet
  4. Mix Dry
  5. Add dry to wet
  6. Mix Chocolate and Walnuts
  7. Form 6oz pieces and place in zip top bag
  8. Refrigerate overnight
  9. Bake middle rack 350°F for 23 minutes (adjust to your oven)
  10. Top with flake salt mid-bake
